I am the daughter of a gypo logger so I thought this would be a good title for my recipe blog :) These are my recipes, some I have taken from other cooks and modified. Those recipes will indicate this.

Hawaiian Chicken
1 to 1.5 lbs. individually quick frozen chicken tenders
1-2 tsp garlic powder
pepper to taste
1 onion, coarsely chopped
1/4 c butter
1/3 c ketchup
1/4 c brown sugar
2 tbsp cornstarch*
1/3 c vinegar
1 tsp soy sauce
1/2 tsp Worcestershire sauce
9 oz can crushed or chunks of pineapple
Preheat oven to 350°F. Place chicken in baking dish, sprinkle with garlic powder and pepper. Cover with chopped onion.
In sauce pan, melt butter. Stir in ketchup and brown sugar with a whisk. Mix cornstarch, vinegar, soy sauce, and Worcestershire sauce together, stir into saucepan. When smooth and starts to thicken, stir in pineapple. Pour sauce over chicken and place in oven.
Bake for approximately one hour. Serve over white rice.
* reduce cornstarch if using fresh chicken, the IQF chicken has a lot of extra water requiring additional thickening agents.
Portuguese Sweet Bread (bread machine)
The dough is prepared in the bread machine, then allowed to rise one more time before baking. I have modified Colby's Great-Grandma Mello's recipe for this. Grandma Mello's recipe makes 5 large loaves or 96 rolls which is a bit much for us.
Portuguese Sweet Bread dough made in bread machine, written in order needed by my bread machine
6 tbsp butter
1/2 c milk
3 c flour
1/2 c sugar
1 tbsp bread machine yeast
1/8 tsp salt
2 eggs
1/2 tsp anise extract
Melt butter and warm milk on stove top until 135° F. Add to bread pan. Add dry ingredients. Beat eggs to break up yolks and add anise extract, pour on top of dry ingredients (do not add with other wet ingredients due to the temperature differences or you will get scrambled eggs). Start dough cycle. Check dough during mixing to see if more flour or milk is necessary. When dough cycle is done, remove dough and either shape into round loaf or split into 16 rolls. Place bread or rolls on greased pan (use a pie plate for the single loaf). Let rise in a warm place for 1-1/2 to 2 hours. Bake at 325° F. Rolls take approximately 15-16 minutes. A single loaf should be checked after 45 minutes.
